Heritage & Nature
The Land Beyond the Forest
The name Transylvania comes from the Latin terra ultra silvam, which means the land beyond the forest. It is a place where ancient forests meet centuries-old villages, where fortified churches rise above the countryside and where traditional farming practices have helped preserve one of Europe’s most remarkable cultural landscapes, with extraordinary biodiversity.
Rolling hills covered with wildflowers, vast woodlands, free-roaming wildlife and some of the largest populations of brown bears, wolves and lynx exist alongside UNESCO-listed villages such as Viscri, the medieval citadel of Sighișoara and the distinctive Saxon heritage. Together, they create a landscape where nature and history continue to shape one another.
Local Flavours
Meals in Transylvania reflect the rhythm of the seasons, the richness of the surrounding landscape and the people who have cared for it for generations. Across the region, family gardens, orchards and small farms supply kitchens where old recipes coexist with a new generation of chefs drawing inspiration from local produce and culinary heritage.
From the seasonal tasting menus created by Chef Róbert at Bethlen Estates to Alexandra’s unforgettable lunches served inside the fortified church of Alma Vii, the range is extraordinary. In Viscri, Alex and Mara have transformed a beautifully restored Saxon barn into one of the village’s most beloved restaurants, bringing together recipes rooted in the area with a contemporary approach to cooking and hospitality. In Meșendorf, Oana and Adi introduce guests to Saxon cooking and artisan cheese, including their award-winning variety, traditionally aged in meadow hay. What connects them is a respect for the land, the seasons and the culinary traditions that continue to define this part of Transylvania.
Artisans & Culture
In many parts of Transylvania, traditional crafts remain part of everyday life. Weaving, pottery, blacksmithing, terracotta stoves and handmade roof tiles are still made using skills refined over generations, preserving both craftsmanship and local identity.
In Mălâncrav, Elena works at a traditional loom, creating handwoven textiles using techniques practiced over decades. Viscri brings together contemporary ceramics and women who continue to make felt slippers by hand, while nearby Saschiz has a long tradition of pottery with its own distinctive forms and colours. Elsewhere, craftsmen still make terracotta stoves in Mediaș, forge iron by hand in village workshops and produce traditional roof tiles using methods that have changed little over time. Their work continues to give these centuries-old crafts a place in Transylvania today.
